Coconut butter is my newest obsession. While almond butter will always be my first love, coconut butter has definitely been making an appearance pretty often. It’s super smooth and creamy and tastes like dessert, or it can be used in more savory dishes. I first found coconut butter over at Marshalls (random- but they have a great specialty foods aisle!) for about $10. Since then, I’ve primarily made coconut butter at home since I can make it much cheaper. Hopefully you will try it and let me know what you think!
Ingredients:
- 2 bags of unsweetened shredded coconut
- 1 tbs coconut oil (optional)
- Dash of salt
Directions:
In a strong blender (I used my Vitamix) or Food Processor dump out both bags of shredded coconut (make sure it’s unsweetened!).

Slowly turn up your blender/ food processor to HIGH. If you are using a Vitamix, continually use the attachment piece to push down the coconut from the sides of the blender. If you are using a food processor, you may have to stop the food processor every few minutes to push down the coconut from the sides.

After about two minutes, add 1 tbs of coconut oil (optional) and a dash of salt.

Now, you have to stay really patient. The coconut will eventually go from a clumpy mess to something super smooth and almost like liquid. This took me about 5 minutes in the Vitamix but can take up to 15 minutes with a food processor.

Once done, store for later use in a jar with a lid.
Some ideas for using coconut butter: bake with it in replace of nut butter, spread on gluten free bread/ muffins, stuff in dates (my personal fave!), eat with fresh berries, eat it straight from the jar with some dark chocolate.
